Getting back on the pin wagon

I have kind of fallen behind on the whole pinterest thing but never fear I am trying to get back in the apron (kind of like getting back in the saddle but with a more kitcheny theme).

First up: Slow Cooker Balsamic and Honey Pulled Pork– these were a win and super easy since the crock pot does most of the work! It makes a lot and gave us a dinner and a lunch. We ate it on onion buns for dinner and I put the pork on a baked potato for lunch the next day.

Second was: Fall Harvest Salad with Pumpkin Goddess Dressing. You might be saying but you don’t eat salad. Well that is kind of true. I will eat spinach leaves topped with raw veggies and cheese and of course dressing. I will also eat pumpkin year round and on anything. The dressing was good, not sweet like pumpkin pie but more savory like pumpkin soup. I did enjoy it but sadly the link to the recipe not longer works. I guess I just have to keep trying more pumpkin recipes..darn.

Next was: BLT pasta salad. Another win! I made this for a potluck and I took home was the empty bowl. This would be great for a summer bbq. I made the dressing the night before and then mixed all the ingredients about a half hour before serving. Not only is this easy but it’s pretty and makes you look like you know what you are doing in the kitchen.

And last but not least: Whiskey Maple syrup .


I took a giant leap out of my comfort zone with this one. Not the whiskey part…I am an Irish girl after all. This recipe had words like simmer, whisk…heavy duty cooking words. I was also a little afraid of cooking with alcohol since it can be so flammable.  The leap paid off and I made syrup! I would make this again both with and without the Whiskey. You could really taste the Whiskey and I would like it a little less potent. I would also make again without but it’s simple and it uses basic ingredients. The stuff you buy in the store has so many preservatives. Don’t get me wrong I love me some preservatives but if I can easily avoid them I try.

All in all this round of pinning turned out really good, now to conquer the 8 million (rough estimate) I have pinned.
